Size matters
Most first-time owners start with an 8.5' x 16' or 8.5' x 20'. Bigger builds (24'+ with a porch) fit a full commercial line for BBQ, seafood boils, and daily-lunch operations.
The must-haves
Every build needs a 3-compartment sink plus a handwash sink, an exhaust hood, and (if you're frying) a fire suppression system. These are required to pass a Louisiana health inspection.
Power & water
Decide between shore power and an onboard generator, and size your fresh/gray water tanks to your menu. We'll spec it all with you.
