Food Trailer vs Food Truck in Louisiana: Which Should You Buy?

Every week somebody walks onto our lot on the Evangeline Thruway and asks whether the boudin, plate lunches or snoballs belong in a trailer or a truck. Here is the honest answer from a family-owned Lafayette dealer that has built food trailers since 2016, does not sell trucks, and will tell you when a truck is the right call.

The short answer

A food trailer is a commercial kitchen in an enclosed cargo shell your pickup pulls. A food truck is the same kitchen in a motor vehicle you also have to keep running. Louisiana's health and fire codes treat them the same, and the festival gate does not care which one you roll in on. Money, mechanics and mobility separate them, and near Lafayette the trailer usually wins all three.

Cost of entry: one purchase or two

A truck makes you buy an engine along with your kitchen. A trailer uses the truck already in your driveway.

Industry startup guides put a trailer build somewhere between half and 80 percent of the cost of a comparable truck (see Sources). Your number depends on menu, hood length and power package: spec it in the food trailer builder, or read our custom food trailer cost guide. The trailer's own extra cost is a hitch, a brake controller and a tow vehicle rated for the loaded weight, so run the free towing check first.

Louisiana health code: the same rules for both

The Louisiana Department of Health permits trucks and trailers the same way: both are a Mobile Food Establishment under Title 51, Part XXIII of the state Sanitary Code, and the plan-review form lists the unit type as "vehicle or trailer."

LDH's Mobile Food Establishment Plan Review Questionnaire (revised January 2025) must be approved before construction or renovation begins, which catches buyers of used units that cannot be permitted as built, and it requires an LDH Food Safety Manager Certificate. LDH also separates a self-sufficient unit, which cooks, holds and washes on board with its own potable and wastewater storage, from a dependent unit that only dispenses and holds. Our builds are spec'd as self-sufficient: the three-compartment sink plus separate handwash sink is included in every configuration in our builder, and fresh and gray tanks, a water heater and a pump are checked by default. Both must also operate from a permitted commissary and report there at least daily (LAC 51:XXIII.4523).

Lafayette's local permit

Lafayette Consolidated Government adds its own permit, listed on its municipal permits page as a Peddler's Permit for food trucks and applied for through LCG's MGO Connect portal. When the councils rewrote that ordinance in March 2022, local reporting listed what it asks for: a commissary address, a certificate of insurance, LCG's hold-harmless agreement, vehicle registration and your LDH permits, with no drive-thru, external lighting or outdoor seating at the unit. LCG does not post the fee on that page and it has changed before, so confirm the current fee and renewal date with the permits office. Other parishes and towns run their own permits.

Fire code: NFPA 96 and what the inspector looks for

The Louisiana Office of State Fire Marshal enforces NFPA 96, 17 and 17A for cooking hoods, and NFPA 96 has covered mobile and temporary cooking, trucks and trailers alike, since its 2017 edition. If your menu produces grease-laden vapor (fryers, flat-tops, most ranges), plan on:

  • A commercial hood over the cook line with a wet-chemical suppression system meeting NFPA 17A, inspected and tagged by a licensed company.
  • A Class K extinguisher plus an ABC, with staff trained on both and on the fuel shutoff.
  • Propane cylinders mounted outside the unit and leak-tested at every change.
  • Ten feet of clearance from buildings, combustibles and other cooking operations.

Who signs off varies by parish and event, so ask before you show up. A cold menu (snoballs, coffee, packaged desserts) may not need a hood at all; our builder offers "no hood" for those concepts and keeps Ansul-style suppression checked by default with every hood, because code requires it.

Mobility: the tow vehicle question

A truck is one vehicle: start it, drive to the spot, cook. A trailer means hitching, backing in and leveling first. But once it is dropped, your pickup is free to run for ice mid-shift while a second cook keeps the window open; a truck shuts down the line to make the same run. When a truck's engine dies, the kitchen dies with it; when a pickup dies, you borrow a buddy's. And when a storm is in the Gulf, a trailer evacuates with you in twenty minutes.

Resale and what happens in year five

A food truck depreciates like the motor vehicle it is; resale guides put it around 15 to 25 percent a year for the first five years. A trailer has no odometer. Its value tracks the shell and the equipment, and a well-built shell kept dry can be resold, re-wrapped for a new concept, or converted back into a cargo trailer. The counterpoint: a turnkey truck can be quicker to flip, while a trailer buyer needs a tow vehicle, and around Lafayette almost every buyer already has one.

The Acadiana festival circuit

The circuit here runs most of the year. These are the next dates each festival had posted on its own site as of September 2026:

  • Festivals Acadiens et Créoles, Girard Park, Lafayette: October 8-11, 2026
  • International Rice Festival, Crowley: October 15-18, 2026
  • Festival International de Louisiane, downtown Lafayette: April 21-25, 2027
  • Breaux Bridge Crawfish Festival, Parc Hardy: April 30-May 2, 2027

Add Scott's Boudin Festival, Rayne's Frog Festival, New Iberia's Sugar Cane Festival and Cajun Field tailgates, and the season never ends. Many events want a separate LDH temporary-event permit and proof of your fire inspection, so keep your permits, suppression tag and insurance certificate in the trailer.

When a truck is actually the right call

If you will work daily lunch service on tight downtown curbs where a hitched trailer cannot legally park, have no tow vehicle and no plan to buy one, or are buying a turnkey truck business with the permits, route and customers included, a truck can make sense. Go in with eyes open about the engine and depreciation, and have the suppression system and permit history checked first. For most everybody else in Acadiana, the trailer puts more kitchen behind the same dollars, holds its value longer, and never leaves you with a dead engine and a cooler of thawing shrimp.

FAQ

Do I need a different health permit for a trailer than for a truck?

No. LDH permits both as a Mobile Food Establishment under the same Sanitary Code rules and plan-review form.

Can I pull a food trailer with a half-ton pickup?

Often, for smaller builds, but a loaded kitchen weighs far more than the empty shell. Check the build sheet GVWR against your truck with our free towing check.
